When It’s Hard to “Get Your Greens”

Sometimes–actually, most times–I reach the end of my day, and my brain starts to do a little checklist of what I’ve had, nutrition-wise. “Breakfast, lunch, dinner, okay. I’ve had zero greens…again!”

Now. I eat plant-based, so that means my diet consists of TONS of beans, legumes, root veggies, whole grains, fruits and veggies.  However, leafy greens are still very hard for me to find the time or desire to eat and prepare on my own. I love “salads;” kale, spinach, arugula and the like. But when I’m standing in my kitchen, hungry for lunch or dinner, I very rarely reach for the bag of lettuce.

That said, I am a huge believer in the value of said “greens,” and I do try daily to incorporate them into my diet. One of my favorite ways to do this is through my morning “Green Powder.” Second favorite way? SMOOTHIES! Literally just empty a bag of baby spinach into a blender and you’re golden. Find other fun things to add to that bag of baby spinach and you’re doing even better!

Here’s a favorite recipe of mine:

1 scoop –  Vanilla Pea Protein Powder

1 tbs – organic chia seeds

1 scoop – Amazing Grass’s Green Superfood

1/2 – avocado

a “dash” of cinnamon

1 – banana (preferably very ripe and very frozen… I had neither today)

1 cup – unsweetened vanilla almond milk

A TON of baby spinach

2 tbs – nut butter of your choice

*optional: a handful of chocolate chips, coconut, or any other fun topping 


 

It’s potent and powerful, with some yummy flavor, to boot! Enjoy!
