Brunch-Worthy Banana “Fritters”

Happy almost-Easter!

Is it just me, or does it feel like this is WAY too early to be having Easter Sunday? We had a streak there, from 2009-2012, where Easter was strictly an April thing… but that clearly changes now and again. Oh well.

I’m off to pack for a brief weekend with family, but before the fun starts, I thought I’d share a little “healthy brunch” item for you banana-obsessives out there. **I snuck some protein powder in the recipe for an added boost**  You’re bound to love it, and possibly use it in that yummy brunch lineup this weekend? That’s up to you!


Banana Oatmeal “Fritters”

makes: 3 fritters


3 large bananas (after making this recipe once, I now think it would be easiest to cut them in half)

1 whole egg + 1 egg white

1-2 scoops of the vanilla protein powder of your choice (I used Nectar)

1 cup of old fashioned oats


Step 1: Place the protein powder, eggs and oatmeal in individual bowls.

Step 2: Grab one of the bananas…

Step 3: …peel it!

Step 4: Coat banana in protein powder.

Step 5: Dip the protein powder-coated banana in the egg.

Step 6: Roll protein powder, and egg-coated banana in the oats. Cover completely.

Then, place on a greased (or parchment-lined) cookie sheet and bake in the oven at 400 degrees for 5-7 minutes on each side.

Remove from oven once oats are golden brown. Serve with maple syrup or honey drizzled on top and ENJOY!!
